Welsh Rarebit
Ingredients:
- 1 cup grated cheese (your
choice, but it must be cheese, not processed stuff)
- 1-3 teaspoons mustard powder.
- 1 teaspoon Worcestershire
sauce
- 1/2 cup beer (English beer if
you can get it, if not, anything but mass-produced US beer)
Directions:
- Mix the first three
ingredients and add enough beer to make a paste.
- Spread the paste on already
toasted bread and put in the broiler until brown and bubbling.
- Remove and cool for a minute
or two.

Grilled Cheese Sandwich
Directions:
- Start with a couple slices of
day-old Italian bread (either real stone-baked deli or home
baked)
- Brush the tops with extra
virgin olive oil and crushed garlic and then grill them top down
in a medium hot skillet. Shake the bread to avoid burning the
garlic (if it is going brown, giving it a pungent odor).
- Remove the slices and, with
the top side up, brush them with a small amount of marinara
sauce and lay slices of fresh mozzarella cheese over them.
- Place under a broiler until
the cheese begins to bubble and specks of brown begin to appear
in the cheese.
Serve hot with a side of olive oil and
fresh ground black pepper, preferably with a glass of Chianti or a
dry Sicilian red wine.

Grilled Cheese Sandwich
Americana style, is to use MARGARINE
(butter burns too easily) on the outside...cook 1 minute with the
margarine side down...turn over, cook 1 minute...turn back over, put
2 slices of CHEESE, not processed blasphemy, and join the bread,
then SQUISH down with a spatula; turn a time or two and cut in half
with the spatula while still in the pan.
MY idea of grilled cheese sandwich, however, is to take
a soft baguette of French bread...slice diagonally...spread ricotta
cheese, add a thinly-sliced tomato with a simple marinade of Italian
herbs, salt and pepper, and run through the broiler for a minute or
two. Sprinkled parmesan or Romano is a nice topping.

Baked Cheese Sandwich
Directions:
- Turn the oven on to 350
degrees. No need to preheat; just turn it on.
- Get two slices of bread and
put 1-2 slices of cheese between the bread. How much cheese you
want to use is up to you.
- Butter both sides of the
sandwich (that is, use a butter knife to spread butter over the
top and bottom of the sandwich).
- Stick it on a tray (preferably
on top of some aluminum foil to avoid stickiness on the pan) and
then stick it in the oven.
- Bake for approximately 7
minutes. Then, take it out and flip it over.
- Turn the oven down to 325.
- Put the sandwich back in and
cook it for another 5 minutes.

Bruschetta
Directions:
Finely, finely, mince some garlic in a
blender. Add some fresh herbs; rosemary, thyme in particular.
Add some extra virgin olive oil and mix well until blended. Add some
good quality parmesano reggiano cheese that is finely grated. (Use
some good quality Italian bread. I got some excellent
rosemary-garlic sourdough at the store yesterday and plan on making
this tonight.) Drizzle the oil/herb/cheese mixture over the
bread. Add some fresh basil leaves, some fresh mozzarella cheese
(the kind you buy in ball form).

Cheesy Garlic Bread
Directions:
- Take a loaf of French bread,
cut lengthwise.
- Top with olive oil, shake on
Italian seasoning. Then a thin layer of Ranch dressing,
more Italian seasoning. Then thinly sliced tomatoes and
mozzarella cheese and garlic.
- Bake for about 10 minutes,
then turn the broiler on for about 3-5 minutes to brown it up.

Bruschetta
Ingredients
- 2 large tomatoes, coarsely
chopped
- 1/2 sweet onion chopped
- 2 tablespoon olive oil
- 1 tablespoon chopped fresh
oregano
- 1 teaspoon chopped fresh basil
- 2 teaspoon chopped fresh
parsley
- 1/2 (1 pound) loaf Italian
bread, cut into 1-inch slices
- 1/4 cup freshly grated
Parmesan cheese
Directions
- Preheat oven to 400 degrees.
- Combine tomatoes, onion, olive
oil, oregano, basil, and parsley.
- Place bread on baking sheet
and top with mixture.
- Sprinkle with Parmesan cheese.
- Bake 8-10 minutes or until
bottom is browned.
